Burrata Salad with Capers

Ingredients

• 4 pieces Lioni Burrata Con Panna
• 2 heads Butter Lettuce
• 1 cup Croutons
• 1/2 cup Capers
• 1 bunch Italian Parsley chopped
• Extra Virgin Olive Oil

Preparation

1) Separate the leaves of the lettuce and arrange in individual salad plates.
2) Add the Burrata cheese to the center of each sprinkling the capers and croutons over the cheese and lettuce.
3) Drizzle with extra virgin olive oil and garnish with Italian parsley.

Makes 4 servings.

Heirloom Tomato Salad

Ingredients

• 4 medium-large heirloom tomatoes
• 4 Lioni Bocconcini mozzarella balls
• sea salt and freshly ground black pepper
• extra-virgin olive oil
• basil sprigs, optional

Preparation

1) Slice tomatoes into ¼-inch-thick rounds.
2) Cut each Bocconcini mozzarella ball into 4 slices.
3) Arrange tomato slices and mozzarella slices on large platter. Sprinkle with salt and pepper. Drizzle with olive oil. Garnish with basil sprigs, if desired.

Makes 4 Servings.

• 2 Large ripe tomatoes cut in 1/4” slices
• 1 8oz Hand Wrapped Fresh Mozzarella cut in 1/2” slices
• 1 small red onion sliced thinly
• 1 bunch fresh basil leaves julienned
• Extra Virgin Olive Oil
• Salt & Pepper to taste

Preparation

1) On a decorative oval serving platter, place tomato slices to cover platter
2) Top each slice of tomato with Mozzarella cheese
3) Sprinkle with 4 onion slices broken open
4) Sprinkle with extra virgin olive oil
5) Garnish with basil
6) Salt & Pepper to taste
