Burrata Truffle Burger
Ingredients
• 1 bunch arugula
• 1 large beefsteak tomato cut in four ½” slices
• 4 brioche buns split
• 1 large or 2 small black truffles shaved
• 4 each 4 oz pieces Burrata con Tartufo
• 1 ½ lbs. coarsely ground beef
Preparation
1) Preheat a cast iron skillet over high heat Lightly brush skillet with vegetable oil. Form the beef into four ¾” thick patties. Cook until bottoms are seared 4-5 minutes. Flip and cook for 4 more minutes for medium. Brush buns with butter and toast in skillet for 30 seconds
2) Cut onion in ¼” slices. Cut tomato in 4 ½” slices & shave truffles
3) Layer each bottom bun with arugula, red onion, and sliced tomato. Place burger on top adding 1 piece of burrata cheese to each and let melt. Add truffle shavings and top bun

Grilled Eggplant with
Mozzarella & Tomatoes
Ingredients
• 3 tbsp. basil oil, divided
• 4 slices ciabatta or other rustic Italian bread
• 3 large ripe red beefsteak tomatoes, cut into ¼-inchthick slices
• 1 lb. Lioni fresh mozzarella, cut into ¼-inch-thick slices
Preparation
1) Brush the eggplant slices with1 tablespoon basil oil. Grill or broil until browned and softened; set aside. Brush bread slices on both sides with 1 tablespoon basil oil; lightly grill each side.
2) Place 2 bread slices on serving plate. Top with eggplant, tomato and mozzarella slices. Top with remaining bread slices. Serve immediately.
Makes 2 sandwiches.
